The menu focuses on live-fire cooking centered on the vibrant, seasonal ingredients Southern California has to offer.
The adjoining space, bar darling, houses a listening bar that offers a different kind of escape—vinyl records spun on a world-class hi-fi sound system, paired with thoughtful cocktails in an intimate setting.
Job Summary :Collaborating closely with the Head Bartender, the AGM plays a strategic role in shaping and managing a dynamic, seasonal cocktail program. This includes staff education, regular updates to offerings, and the development of SOPs and Steps of Service tailored to the bar experience. A strong emphasis is placed on cost control and profitability, with accountability for daily financial oversight such as inventory tracking, COGS reporting, invoice processing, and vendor relations. The AGM also ensures optimal bar coverage and labor efficiency aligned with business needs, while expanding contracted offerings to drive beverage sales and enhance guest engagement.
Operational Leadership
The AGM oversees the full spectrum of daily restaurant functions, ensuring smooth administrative execution—from payroll processing and POS management to floor planning and opening/closing procedures. They provide structure and clarity to the team’s responsibilities through clear direction, consistent coaching, and when necessary, corrective action. The role includes ensuring compliance with DOH standards through multiple daily walkthroughs and immediate resolution of any violations. Operational excellence is further reinforced by promoting safety practices, conducting accident investigations, and sustaining high product quality through strict adherence to Darling’s recipes and service standards. The AGM also facilitates effective communication of company promotions and initiatives and actively participates in community engagement efforts that align with the brand’s social responsibility goals.
Team Development & Leadership
At the core of the AGM’s responsibilities is cultivating a high-performing, hospitality-driven team. This includes recruiting, interviewing, hiring, training, and ongoing development of hourly staff. The AGM champions a positive workplace culture by setting the tone for excellence in service, leading by example, and continuously elevating standards. They play a key role in managing conflict resolution, conducting performance evaluations, and implementing development plans when needed, in coordination with General Management. By fostering open communication and encouraging team contributions, the AGM builds morale and enhances team cohesion. Additionally, they ensure team-wide knowledge of Darling’s offerings and maintain up-to-date training materials and service manuals.

They consistently model professionalism and hospitality, adhering to grooming standards, behavior expectations, and internal policies outlined in the Employee Handbook. Active participation in training sessions, meetings, and ongoing education is expected, as is accountability for proper care of company assets and upholding the brand’s visual and service identity across all touchpoints.
